Hello Monday! I am an absolute sucker for any cookies, particularly cookies that contain chocolate chippies or oats! Ones with fruit however... have never really been my thing. UNTIL NOW. Allow me to introduce you to my latest exciting (and healthy) creation... Radpberry and Dark Chocolate Chunk Cookies! With the help of @freshasnz freeze dried Raspberry powder, these bad boys turned out amazing! I simply added the powder straight into my batter and they even came out pink on the inside! SUMMER SALADS ARE THE BEST ☘️🥑🍅🥦
5 INGREDIENT BANANA BREAD MUFFINS 🥧🍌 Ingredients:
2 cups whole oats
3 ripe bananas, mashed
2 eggs
3/4 cup pitted dates
1 teaspoon baking soda
1 teaspoon cinnamon (optional)
2-3 tablespoons coconut sugar (optional)

Method:
Preheat oven to 180 degrees C and prepare or line a muffin tin.
Combine all ingredients other than coconut sugar in a high speed food processor until smooth and well combined. 
Pour batter into muffin tin and sprinkle lots of coconut sugar on top of each muffin. This helps it get golden and crispy!! Bake for 15-20 minutes, until cooked through and a prick comes out clean!
